Signature Dish - Filet of Capitaine

The Signature dish, filet of ‘Capitaine’ on a bed of spinach accompanied with lemon-saffron sauce was introduced at the Kempinski Hotel N’Djamena in 2013. The fish is also known as Nile Perch. It is interesting for our guests to discover our fresh capitaine carpaccio which has become a popular dish.

The fish lives naturally in the fresh water of the famous Lake Chad which flows into the Chari river allowing us to have ‘capitaine’ fish delivered fresh daily.
