"Twisted Lamb Ouzi" - as extraordinary as it can get!
Lamb is one of the most commonly consumed meats here in the Middle East, in addition to Ouzi which is a type of rice that is normally combined with meat. There are several different ways on how to cook ouzi and lamb shanks. With these two local favourite ingredients, our talented Chef de Cuisine has created the hotel's delicious signature dish of 2014 – The Twisted Lamb Ouzi.
The dish is a modern take on an old-time local favorite that originated at the major festivals in the Muslim culture, such as Eid Al Adha. Chef Matthew’s spin on this dish was created whilst he deconstructed the basic dish and manipulated the texture. He also incorporated new school cooking techniques for the preparation of the dish – which added an extra touch of excitement and novelty.
This signature meal is put together with spiced braised lamb shank, Ouzi rice – placed on top of a phyllo basket crusted with cashew nuts, tossed with roasted almonds and cashew nuts, red pepper powder and garnished with micro herbs.
Chef's goal was to introduce a new gastronomical experience for both hotel guests and the locals to enjoy by using familiar tastes that often remind them of a home-cooked meal, however with a new approach to textures of the dish, adding an exciting twist to the overall meal.
