Let it be cookies everywhere

If you pass through or visit Aspen by Kempinski, you won’t be able to forego the delicious smell of our freshly baked cookies and pastries, especially now during the festive season.  We went on a discovery trip in the pastry kitchen and met up with our Executive Chef Sudqi Naddaf. We asked him if he could share some secret recipes with us so we can make some of these yummy treats at home as well…

Here are two recipes that will seriously improve your cooking skills and satisfy anyone’s sweets tooth.

Chef Sudqi’s first recommendation is the Cinnamon Star:

To make the dough you need the following ingredients:

0.5 kg almond meal

125 gr marzipan

400 gr icing sugar

100 gr egg whites 

10 gr lemon zest

100 gr cinnamon powder

 

For the icing you need:

375 gr icing sugar

75 gr egg whites

1 gr citric acid

Mix all the ingredients for the dough together and leave it in the chiller for 1 hour.

Roll out the dough, making it approximately 1 cm thick. (Spread some flour under and over the dough so the dough doesn't stick to the table and the pastry roller.

After that, spread a thin layer (1-2 mm) of icing on the dough and use a star cutter to cut the stars and place them on the baking tray.

Repeat this until no dough is left…

Bake for 8-10 minutes at 150 degrees. 

 

Another winner is Baseler Leckerli, here are the ingredients:

500 gr honey

250 gr muscavado sugar (dark brown)

10 gr cinnamon

10 gr ginger powder

 

500 gr whole meal flour

300 gr mixed peel

5 gr bi carb soda

50 gr orange blossom

 

150 gr almond flakes

 

500 gr fondant

50 gr lemon juice

 

Method:

Heat the honey and brown sugar to 60 degrees.

Add cinnamon and ginger powder and let it cool down to room temperature.

Mix the flour, mixed peel, bi carb soda and honey to a very soft dough.

Put the dough on a baking tray and roll it out. 

Sprinkle the dough with the almond flakes.

Bake for 7-10 minutes on 180 degrees.

Heat the fondant with the lemon juice (tip: not in the microwave) until it is melting.

Once melted and the dough is baked, brush the fondant over the ready baked dough.

Return to the oven for another 5 minutes

Once it is cooled down, cut it into squares and enjoy :)
