Kempinski Dessert of the Year 2014: Siam Passion
Siam Passion, created by Alfred Merkel, Pastry Chef at Siam Kempinski Hotel Bangkok, is Kempinski Dessert of the Year 2014.
In total, 66 desserts were entered into the 2014 Kempinski Dessert of the Year contest. On 5 March 2014, at Hotel Adlon Kempinski Berlin, the winner of last year’s award, William McCarrick, Executive Pastry Chef at Çırağan Palace Kempinski Istanbul and James Norman, Regional Executive Chef Kempinski Europe pre-selected the top seven desserts which were graded on a scale of 100 points.
The final top five desserts entered the finale where a jury consisting of 100 journalists, 20 Kempinski general managers and board members judged the desserts in a blind taste test.
Siam Passion was finally selected as the winning dessert: Alfred Merkel, pastry chef at Siam Kempinski Hotel Bangkok combined his passion for tropical fruits with the beauty of the local Thai culture. The dessert is a combination of passion fruit, coconut, mango and banana arranged according to the European style of Chef Merkel: "As a traditional European recipe that was interpreted through the Thai cooking techniques and by using Thai ingredients the dessert's composition in its entirety represents a collection of individuals."
