If you are lucky, one or more of the Diya team could well be presenting one of their monthly "north Indian cooking classes". Diya's open, display kitchen seems to have been tailor made for these fun and informative sessions.
Again, located just off the lobby, this classically designed north Indian master piece creates an opportunity for world recognized chefs to combine the absolute best of the incredibly subtle north Indian spices with carefully selected ingredients from throughout the region. Centuries of north Indian culinary innovation and creativity seems to have evolved from the kitchens of countless Indian mothers each competing, over the years, to better their last masterpiece and to continually delight their families with ever better flavours, textures, colours and culinary presentations. Somehow the Diya team have managed to tap into this wonderful tradition and delight in sharing some of the most superbly crafted dishes imaginable.
To add to the experience, live music pulsates each night with the race between the tabla and the sitar consistently providing a memorable back drop to superb food and typically attentive, unobtrusive and professional service.
As a result of all the ingredients of food, service, music and ambience combining together, Diya has been awarded 'The Times of India" - "Best north Indian restaurant" in both 2010 and 2011. Further national and international recognition seems to flow naturally from the incredible commitment of the Diya team and in both 2010 and 2011, Executive Sous Chef, Kunal Kapur has distinguished himself as one of two professional Chef / Judges in the local television block buster, "Master Chef India". And in early 2011 he joined the crew of "Master Chef America" as one of two internationally recognized "guest judges" for two programs of the North American blockbuster.
